This is the class for the cook that wants to learn to use moulds, gels, foams and mousses to create their own dessert masterpieces, just like on the TV cooking competitions. You will bake a sponge base for you masterpiece, top of with a fruit mousse, filled with a gel, then glazed and garished.

This class is suitable for beginners as well as advanced cooks who wish to learn new skills and techniques. I will teach you techniques that you can use to impress everyone with your creative cooking abilities.

While you cook, enjoy the treats of a High Tea, including finger sandwiches, canapes and drinks.
