I love to cook, I've always loved to cook.

As a young girl, my time was spent reading the cookbooks that mum kept in the bottom kitchen drawer. Always looking for a new recipe to try, a new food idea. Many weekends were spent making rainbow cakes with as many colours as possible – have you seen my Instagram, not much has changed, and looking for recipes that I could cook using what was available in the cupboard or from the vegetable garden.

At the aged of about 16, I remember stating that I wanted to leave the farm and travel the world. This would be followed by retiring by about 30 and moving back to South Gippsland to grow vegetables and cook. From 16 fast forward 20 years and I returned, starting Jacican Food Studio in Mirboo North, Gippsland where I grow vegetables and cook. This blog is where I share my food adventure.


Jacican Musk Sticks recipe

My nine-year-old niece told me about this recipe, asking if I could get her some musk flavour, as it can’t be found in the supermarket. Which I did.

Together we made my first batch of musk sticks. That was five years ago and now I make musk sticks all the time (along with many other types of handmade lollies). The ‘sticks’ come in many flavours – musk, bubble-gum, peppermint, vanilla, passionfruit. Any flavour or colour you can think of.

This recipe has led me from cooking with kids, to cooking classes for grown-ups and now taking part in the Village fest in Jindivick.

  • 640 grams of icing sugar, sifted 
  • 1 teaspoon gelatine
  • 1 teaspoon glucose
  • 75 ml water
  • 1 ml of musk flavor
  • pink food coloring

Combine water, glucose, and gelatine in a small saucepan and heat until gelatin has dissolved.  You may want to mix it as it heats up.

Put the icing sugar in the bowl of a Mix-master with a K beater. Add the water. Mix in three stages, mixing well between stages.

Beat until very well combined, then add your musk flavor and your desired amount of pink food coloring.

Transfer to a piping bag with a nozzle.  I use a 7mm star nozzle. Pipe onto baking paper-lined trays.

Leave in a cool spot to dry out, away from hungry hands and mouths.  The original recipe said to dry for 22 hours, but the last lot I made took five days to dry out completely. It depends on the temperature and humidity.

Now I make musk sticks in many flavors - bubblegum, orange, strawberry, peppermint and don't forget musk. You can sample my musk sticks at as part of a Jacican High Tea or pick a bag or stick next time you drop by Jacican or my online store.
