I love to cook, I've always loved to cook.

As a young girl, my time was spent reading the cookbooks that mum kept in the bottom kitchen drawer. Always looking for a new recipe to try, a new food idea. Many weekends were spent making rainbow cakes with as many colours as possible – have you seen my Instagram, not much has changed, and looking for recipes that I could cook using what was available in the cupboard or from the vegetable garden.

At the aged of about 16, I remember stating that I wanted to leave the farm and travel the world. This would be followed by retiring by about 30 and moving back to South Gippsland to grow vegetables and cook. From 16 fast forward 20 years and I returned, starting Jacican Food Studio in Mirboo North, Gippsland where I grow vegetables and cook. This blog is where I share my food adventure.


Kids in the Kitchen cooking classes are now open for bookings! Which means your youngsters are about to take over the Jacican Food Studio and go into a cooking frenzy.

One of the most popular classes in the Kids in the Kitchen calendar is Lollies. Kids and lollies just go together, don't they? On the day, mums, dads, and grandparents will drop off their children, who will learn how to make and then take home their own fruit pastilles, toffee apples, and chocolate bark, as well as the recipe I'll share with you now for authentic musk sticks.


  • 640 grams of sifted icing sugar
  • 1 teaspoon of glucose
  • 1 teaspoon of gelatine
  • 75 grams of water
  • 1 ml of real musk essence* (a little of the real stuff goes a long way)
  • Food coloring (you can use any color you like, but pink is the most authentic for a traditional musk stick)


  1. Combine the glucose, water, and gelatin in a saucepan and heat until the gelatin is melted. Make sure to stir occasionally to prevent clumping and burning.

  2. Sift the icing sugar into the bowl of your mix master.

  3. Slowly add the glucose and water solution in 3 installments, allowing each portion of the solution to be completely mixed in before adding the next.

  4. Add the musk essence and food coloring and continue beating until the coloration is even throughout the mixture.

  5. Put the mixture into a piping bag with a 5-7mm star nozzle. The nozzle will give your musk sticks their classic shape.

  6. Pipe the mixture onto the greaseproof paper lined trays in long unbroken lines.

  7. Place the tray in a dry place to set. It may take several days to fully harden, but they can be eaten as soon as they don't break when picked up.

* Unlike the musk sticks you see on supermarket shelves, Jacican uses real musk sourced from The Melbourne Food Depot, which provides a depth of scent and flavor that you just don't get from the chemical cocktails used by mass manufacturers in factories. Real musk can expensive and difficult to find in stores though, so if you can't get your hands on any, it's an opportunity to get creative and use other flavors such as strawberry, bubblegum peppermint or anything you can imagine working.
