Together we will process wild duck, with each class guest producing their own take-home serve of 'Potted Duck'.

  • • Learn how to bone, prepare and cook game meats.
  • • Cooking methods include roasting, barbeque, and confit.
  • • Make game stocks and sauce.
  • • Learn various techniques to finish off a game dish.

This class is suitable for beginners as well as advanced cooks who wish to learn new skills and techniques. You will learn that preserving is not as hard as you think. We will teach you techniques that you can use to impress everyone with your creative cooking abilities.

A shared lunch is included in this class. Please let us know if you have any dietary requirements.
